My MIL has a gas stove and I have been combing the internet to find an automatic shut-off device for a gas range and oven. Has anyone found such a thing?

Technically, a device for an electric stove could be used to actuate a valve placed in the gas line. However, this would not work if it is an older stove with pilot lights. Because of this issue, I doubt that you will find such a device for gas stoves. Your best bet might be a device that is an automatic fire extinguisher mounted over the stove.

At some point, you have to disconnect the stove, or you can remove the knobs.

There are electric water heater pots with automatic shutoff. Also microwave ovens, however the type with twist knob timers are the ones that they remember how to use the longest. The push button type become too complicated for them.

How many times, years before we noticed anything wrong with Mom, other than that she could not seem to ever stop talking, did I visit her house only to find the gas stovetop, one burner on full tilt?

"Mom, what's this on for?"
"Oh, I don't know. I must have forgotten to turn it off."

It scares me to this day.

If you simply shut off the gas inlet valve, would she notice?

If not, that'd be a low-tech solution. And someone else (a caregiver?) would be able to use the stove when needed.

Removing the knobs is another good low-tech suggestion.

I looked into this briefly a few years ago after my father had a small apartment fire when he didn't notice that a toaster oven had failed to shut off. The best solution would have been to replace the gas stove with an electric but the apartment wasn't wired for it. Fortunately he was so upset after the fire that he wouldn't go near the gas stove, and we were able to leave it in place 'til he got 24-hour care and the attendants were able to use it.

If there's a readily available shutoff valve out there, it'd be good to know about it.
